Vanilla Muffin/Cake Mix

Makes 12 muffins or 1 large cake layer.

Ingredients:

  • Stone-ground flour
  • Sugar
  • Baking Powder
  • Sea Salt

What you will need:

  • 3 Large Eggs
  • 1 Cup Milk
  • Half Cup Sunflower Oil
  • 2 Teaspoons Vanilla

Method:

  • Preheat oven to 180 degrees celcius.
  • Line muffin pan with cupcake liners.
  • Empty content of packet into a large mixing bowl.
  • Beat eggs, milk, oil and vanilla extract together until combined.
  • Mix egg and dry mixture together until smooth.
  • Fill cupcake liners half way for 18 medium size muffins or fill them three quarters of the way for 12 large muffins.
  • Bake for 18 minutes.
  • The muffins are ready when the tops are still soft but spring back after touching them.

For one cake layer:

  • Grease 2 cake pans and line the bottoms with baking paper.
  • Divide the mixture (as per the mixing instructions above) between the two cake pans.
  • Bake for 20 minutes.
  • When the cake is ready it will pull away from the sides.
  • Let it cool on a rack.

Now you don’t have to cut the layer in half…you might have to just cut the top to make it straight.

We suggest using 2 packets of vanilla muffin/cake mix to make one cake.
